The Stafford London is proud to unveil its new restaurant: MICHAEL CAINES at The Stafford, created in collaboration with the celebrated Michelin-starred chef. Marking Caines’ first London residency, the restaurant introduces his signature modern European cuisine to one of the capital’s most iconic settings, creating a new culinary destination in the heart of St. James’s.

Set against the timeless elegance of The Stafford, the restaurant offers a refined destination dining experience. The menu celebrates the best of British seasonal produce, blending new and exclusive creations with Caines’ renowned dishes from Lympstone Manor, alongside cherished classics from The Stafford’s own heritage.

The American Bar at The Stafford London is an institution in its own right where every available wall and surface is crammed with an intriguing collection of artefacts, knick-knacks and signed celebrity photographs donated by patrons and guests over the years. Overseen by Bar Director Sophian Ejjanfi, The American Bar is open daily from 8am until 11pm. Enjoy a light breakfast, an alfresco lunch in the private cobbled courtyard, or relax with a Signature cocktail while soaking up the history of this famous bar.

A compelling history lies beneath The Stafford London in its 380-year-old Wine Cellars. Built in the 17th Century by Lord Francis Godolphin, and used as an air-raid shelter in World War II, these fascinating cellars house up to 8,000 bottles of the finest wines. Today, Head Sommelier, Nuno Pereira, hosts wine tastings and wine-pairing dinners throughout the year. With over 35 years of experience at The Stafford alone, there isn’t a bottle he hasn’t tried which rests beneath the hotel.

Sustainability Initiatives +

The Stafford Collection is dedicated to reducing its impact on the environment, and introducing and following sustainable practices across the portfolio. A huge number of initiatives have been introduced over the last five years, with the aim to increase this even further.

All waste within the portfolio is managed with the aim of zero waste to landfill. Glass is crushed and recycled, cardboard is compressed and collected, and food waste is separated and processed by our waste management partner.

In our hotel, our dedicated Green Committee have introduced a ‘go green while you sleep’ programme, aimed at encouraging guests staying for longer than one night to reuse their bed linen and towels, only changing them if absolutely necessary. The Stafford London works with the charity Clean Conscience, who recondition and redistribute ‘used’ toiletries to homeless shelters to minimise waste.

Across the Stafford Collection, all energy comes from green and renewable sources. LED and energy efficient lightbulbs are used across the portfolio, and light sensors are fitted to all back of house areas to reduce consumption. All chemicals used in the housekeeping and kitchen departments are PH neutral.
