Fleur de Loire is an exceptional property imagined by two-Michelin-starred Chef Christophe Hay, a disciple of renowned Chef Paul Bocuse. Nestled on the banks of the Loire River, in the heart of the Châteaux de la Loire Loire and close to the majestic Château de Chambord, this 17th-century residence has been transformed into a refined and sustainable retreat where hospitality, gastronomy, and nature come together.
As the only two-Michelin-starred restaurant in the region, Fleur de Loire reflects Chef Hay’s lifelong dedication to excellence, local terroir, and environmental responsibility.

Sustainability Initiatives +
Fleur de Loire embodies a sustainable and ethical philosophy, recognized with prestigious awards such as the Michelin Green Star, La Liste’s Ethical and Environmental Responsibility Prize, and the Clef Verte label (2023, renewed in 2024).
Designed to minimize its ecological footprint, the hotel features a closed-loop water-based air conditioning system, rainwater harvesting for garden irrigation, and 100% wind-powered electricity. All furniture is sourced from sustainably managed forests (FSC or PEFC).
Chef Christophe Hay champions a responsible, local cuisine rooted in the Sologne region. With a vegetable garden, citrus greenhouse, Wagyu farm, and a focus on freshwater fish, he promotes short supply chains and respects natural cycles. He is now recognized as an ambassador for the Centre-Val de Loire region.
In the kitchens, sustainability meets innovation: appliances run on renewable energy, consumption is optimized, and food waste is processed through composting and dehydration systems.
The eco-conscious approach extends to the rooms: locally made bath products, wooden room keys, biodegradable vacuum bags, and daily recycling practices. Fleur de Loire is also a member of Ethic Océan, supporting the sustainable management of marine resources and the protection of aquatic ecosystems.
