Forty-five floors above Central, this is where Hong Kong's power brokers quietly disappear. AMBER holds two Michelin stars; Sushi Shikon holds three — dinner reservations here are a flex, not a fallback. The Oriental Spa is genuinely among Asia's finest, not marketing copy. PDT pours properly. What it isn't: a resort, a pool property, a place to decompress with ocean views. Come for the city at its most concentrated and unforgiving. Come for two nights minimum, leave with the kind of calm only serious money and serious service can manufacture.

Chef Richard Ekkebus’ modern take on progressive cuisine is outstanding, as are the wines that can accompany it.
