Umbria from a hilltop, breakfast built from what grew fifty metres away, and silence that actually holds. Aethos Saragano earns its devotees among the kind of people who consider a well-sourced meal the point of the trip — olive groves, organic produce, views that make you cancel your next destination. Come for two or three nights minimum; the pace demands it. Arrive expecting a resort infrastructure and you'll feel the absence. This is for the deliberately slow. Everyone else should look elsewhere.
