- The deep connection with the territory and the 0 km vegetable garden enhance the history and typicality of the place on the table.
- Starting from 2022, the hotel has joined the Zero Waste Hotel® protocol and has adopted numerous sustainability practices that aim to reduce waste
- Waste products, CO2 emissions and to avoid water and energy waste.
- The elimination of plastic and the strong attention to recycling, such as that of cork stoppers sent for transformation into materials for bio-economy and design objects, allowed in 2023 to obtain a differentiated collection equal to 88 .03%.
- The staff uses refillable water bottles instead of disposable bottles and naturized water dispensers are also available for guests.
- All bottles in the minibar, restaurant and common areas are made of glass. Furthermore, plastic straws and cans have been eliminated.
- As part of the Zero Waste Amal Coast project to which Monastero Santa Rosa participates with the Amal Coast Tourist District, the peels of lemons and oranges are used for the production of bio-gas.
- The current strategic sustainability plan envisages the adoption of new practices in the short term that will further reduce the waste and emissions from the facility, such as composting which will transform organic waste into ecological fertilizer for the soil, agreements with suppliers for reducing packaging and using sustainable coffee capsules.
